Acorn Cinnamon Muffins

The recipe is quick and easy.
Ingredients:
- 2 medium eggs,
- 125 ml of margarine for baking (or butter or vegetable oil),
- 250 ml of milk,
- 250 g (cane) sugar,
- 200 g of ordinary wheat flour,
- 200g of Acorn Flour,
- 3 teaspoons baking powder,
- 2 full teaspoons cinnamon,
- 1 teaspoon ground salt.
Preheat the oven to 190 ° C and prepare a model for muffins, which is lined with baking paper for muffins.
In a large bowl, 1 min. lightly beat 2 medium eggs with a hand-held electric mixer. Add 125 ml of softened baking margarine and 250 ml of milk and stir to combine the ingredients. Then add 250 g of sugar and mix until you get a smooth mass.
Add 200 g (sifted) flour, 200 g (sifted) acorn flour, a teaspoon of ground salt, 3 teaspoons of baking powder, and 2 teaspoons of cinnamon. Then mix to make the mixture smooth.

Fill the muffin tin by two-thirds and bake for 20-25 minutes (depending on the size of the tin) until they rise.
Once nicely baked, take the muffins out of the model, wait for them to cool, and sprinkle them with powdered sugar and cinnamon.
